Community Soup

In September, Cedarwood launched its first round of parent meeting evenings with community soup and child care support provided.

We are always looking for ways to provide real support for our community — especially when it involves getting our parents to incredible education opportunity of our teacher-led class meetings! When the idea formed to provide child care at the meetings, we knew that a warm and filling meal was needed to fuel families for the evening.

This community soup is nourishing, flavorful, vegan & gluten-free, and simple to make (we’re busy working parents, too!).

Prep work can be done in advance, if you’re short on time in the evening. Seasoning at various points in the process brings out the full flavors of the vegetables used. And, like many soups, this one makes for very good leftovers.

Community Soup

1 large yellow onion, chopped
2 lb carrots, chopped
1 lb celery, chopped
3 lb yukon gold potatoes, diced
3 tbsp olive oil
56 oz canned diced tomatoes
64 oz vegetable broth
salt & pepper to taste
fresh parsley, chopped (optional)

Heat oil in a large pot over medium-low heat. Add onion and cook, stirring often, for three minutes. Season with salt and pepper and stir in chopped celery and carrot. Cook for about five minutes, until onion is translucent. Season again with salt and pepper and add potatoes.

Add diced tomatoes (with juices) to the pot. Turn up the heat to medium-high and cook until the juices begin to bubble. Season with salt and pepper and add vegetable broth. Cover pot and bring to a steady simmer.

Cook soup for 30-45 minutes, until potatoes are tender.

Season with salt & pepper to taste. Serve with fresh chopped parsley and a chunk of bread!
